Low Glycemic Index Tasty Bread!

I wanted to create a bread that my husband could eat occasionally because of it's numerous Candida experiences (read his story with Gluten toxicity in the small intestine) he had to stop eating sugars and carbohydrates.

As breads contain cereals that turn into carbohydrates during cooking, I have been looking for a way to prepare a bread with a low glycemic index and I found exactly what I needed : Coconut flour and almond flour (from the family of nuts and not cereals) were perfect. This is the easiest bread I have ever made. A bread that look's like a very tasty cake.

Ingredients

  • 1 ½ cup (375 mL) almond flour
  • ½ cup (125 mL) coconut flour
  • 2 c. Soup (30 ml) ground flaxseed (optional)
  • 2 c. Soup (30 ml) baking powder
  • ¼ c. Tea (2.5 ml) sea salt
  • 2 c. Tea (10 ml) of xanthan gum (or guar)
  • 1 C. Soup (15 ml) honey
  • 1 ½ cup (375 mL) warm unsweetened almond beverage
  • 4 eggs at room temperature
  • ½ cup (125 mL) avocado or coconut oil
  • ½ cup (125 mL) raw pumpkin seeds

Preparation

Preheat the oven to 350 ° F (180 ° C). Grease a bread pan.

In a large bowl, combine all the dry ingredients. Book.

In a food processor, combine eggs, honey, almond drink and oil. Stir in dry mixture. Pour into the bread pan and sprinkle the top with the pumpkin seeds.

Bake for 1 ½ hours, or until a toothpick inserted in the center comes out clean. Place a bowl of water on the bottom rack during cooking. This allows the bread to be less dry and get a crust successful. Remove the bread from the pan and cool on a rack.
