About vitamin D: Vitamin D is synthesized in the skin when it is exposed to ultraviolet B (UVB) rays. This synthesis is, however, dependent on the latitude, the season, the hour of the day, age, the use of sun blocks and skin pigmentation (IOM, 1997).
In Canada, the synthesis of vitamin D by the skin is insufficient during the winter months (October to March). Unless you are willing to eat large quantities of certain foods, it is practically impossible to respect the recommended dose of vitamin D without taking a supplement.
